This transit box has easy-to-use heating/proofing control. In heat mode, the temperature can be set to hold the food up to 180°F. In proof mode, humidity can range from 30% to 95%, with temperatures up to 115°F. The air blower provides circulating air throughout the box for even heat distribution. The transit box can hold up to (34) 18”x26” sheet pans (not included with rental) and requires a 15-amp dedicated outlet (this is a standard residential power outlet)
