Due to Covid-19, we have been busy helping restaurants move their dining rooms to the outdoors, oftentimes in their parking lot! While this is a new scenario for many restaurant owners, we actually have years of experience helping extend dining rooms during the winter months. Here are our best tips and items if you need guidance for creating patio dining.
Tents are the best way to create a defined and chic space for outdoor dining. They provide shade on hot days, and can keep guests warm on cool nights with the use of sidewall (we recommend sidewall on one or two sides to still allow for air flow). Dress up the tent with leg drapes and lighting and you will “wow” your patrons.
A simple tent is turned into a dining room with a few chandeliers. We install our chandeliers with a dimmer switch so you can set the mood as the sun sets. String lights are another easy and stylish way to provide light.
Putting down some type of flooring will help ground the space and make it feel nice, especially if you are using your parking lot. Astroturf works great as it can be swept and hosed down when needed. Carpet or vinyl flooring are more luxurious options and will enhance your design. Whichever you choose, we advise planning to replace it every 6 weeks or so due to wear and tear.
If you are not using a tent to delineate your dining space, fencing or hedge walls are a great way to enclose your space. If your setup is in your parking lot, talk to your property manager about providing traffic barricades and large planters to keep your patrons safe.
If you have the space, create a waiting area for your patrons. Couches or stand-up pub tables near an outdoor bar will keep guests happy and hopefully ordering drinks and appetizers before they sit down for dinner.
Don’t forget to allocate a small space for your waiter stands. We are often using Boxwood Hedge walls to create a hidden corner for a bussing station and beverage pitchers. Another tip is to incorporate a distinct piece of furniture to store extra plates, flatware, and napkins; adding greenery and florals will really up the design!
Keep your guests comfortable with umbrellas for shade, and heaters for those chilly nights.
However you decide to reopen your restaurant, we know it takes a lot of grit and determination to make it happen. We are here to help you transition and are happy to answer any questions you may have.
